Cast your mind back to April last year and you may remember when we shared with you the news of Seabourn announcing its partnership with top American restaurateur and Chef Thomas Keller.
Since then, Chef Keller’s been busy putting together a mouth-watering menu of culinary creations which will debut in May on Seabourn Quest in an all new signature restaurant, which is set to then be introduced across the Seabourn fleet.
It’s not just new menus and a new restaurant that foodie cruisers can look forward to though, as there are a series of special themed nights in store in the Colonnade and the Patio Grill. The more relaxed nature of these venues is reflected in Keller’s culinary choices, with some of his childhood comfort dishes such as BBQ Ribs featuring, along with his signature Napa Burgers by the pool.
The Restaurant will showcase a number of Chef Keller’s famed French-American dishes on certain evenings. Here’s a sample of what’s in store:
Terrine of Moularde Duck Foie Gras
Truffle Pain de Genes, Compressed Asian Pear and Sicilian Pistachio
Tamari Glazed Shiitake Mushrooms, Golden Beets, Savoy Cabbage and Yuzu
Sonoma Duck Breast ‘Poêle’
Crispy ‘Rillettes,’ Glazed Harukei Turnips, Pickled Blueberries and Red Cabbage Puree
Ginger and Yoghurt Semifreddo
Whipped Green Tea and Lemon Meringue
Champagne and Granny Smith Apple Trifle
Crème Chantilly, Vanilla Custard, and Champagne Jelly
Not only will the dishes benefit from Chef Keller’s expert touch but they’ll also be made with ingredients supplied by some of the finest purveyors, including Elysian Fields Farms, Hobbs Applewood Smoked Meats and Gourmet Attitude.
